Reminiscing the Past

It was late July when I got back to Caraycaray Banderahan and notice it was high tide and so we left our motorbike at the Ilawod church with my brother, sister, cousins and my cute little niece and so we headed our way with a salt water on the road, it was not unusual though because when I was younger the water really filled the road but not too overflowing like what we’ve observe today. We walked not far from the church and the water is below the knee and for some part is above the knee until we reach the Banderahan Islet.

There is really a big difference in the place where my younger memory days is. The Banderahan is the place where the family hangs out together with occasions or no occasions, it depends on any occurrence.
Back to my childhood days I could still remember its almost every month we got to this place with my family and relatives and we all had fun and don’t even matter if our skin gut sun burn or we get really dark brown as long as we enjoyed the day before going home but so sad when its leaving the salt water and we still wanted to swim. Ohhhh!

So if I am going to compare those days from where my childhood days of what had happened today in the said place, of course there is really a big changes. So, the water is overflowing from the last portion of the cemented road (it could not be just the last portion) until you get to the isle. The houses before is far from the salt water with a big distance unreachable by the ocean and a wide space where you can cross not soaking your feet or knees in the salt water, but now, a gigantic difference happened due to getting of sands and gravel in Banderahan, people are too abusive and don’t even think what might happen if they don’t stop getting those stuff.

The houses were moved up of the elevated islet, I kind of don’t know how to explain it but the water is now connected with each other and the islet is almost going to vanish especially in high tide you cant cross the opening area of the islet if you are not going to soak in the salt water because there is no other way for you to get in the place but to swim or to walk above the hips sea water level. It was kinda disappointing because of the what if’s, what if it’ll vanish? So the good memories will be vanished too? Or it will be just a memory? And how about the future kids, are they not going to enjoy and see the beautiful place where my/our childhood fun memories is? Its very disappointing when all of the good stuff will be soon come to an end due to abusiveness of nature.

Well, folks that was the miserable part but there is still a good thing happen. At the last portion of the islet where most of the houses were move up is a nice view and nice clear salt water is and with new cottages is build up for business (government business) for some people, family and visitors to have shelter in.

YUM YUM YUM :P

Personal Pizza

INGREDIENTS:

DOUGH:
3 cups Bread Flour
1 cup Lukewarm Water
1 1/2 tsp. Instant yeast proofed in
1 Tbsp. Lukewarm water
1 tbsp. Salt
6 Tbsp. Olive Oil

MARINARA SAUCE:
1/4 cup Extra Virgin olive oil
2 Tbsp Onions, minced
2 cloves Garlic, minced
2 cans 28 oz Crushed tomatoes
2 tsp. dried oregano
¾ Tbsp Salt
1 tsp. Fresh Ground Pepper
2 pcs Laurel leaves
5 pcs. Basil leaves

TOPPINGS:
Mozzarella Cheese
Basil leaves
Pepperoni
Italian Sausage
Mushrooms
Anchovies
Bell Peppers

PROCEDURE:

DOUGH:
1) In a bowl, mix flour, water and yeast. Once combined, add salt then the oil.
2) Put mixture in a stand mixer with a hook. Turn it on medium speed for around 5 mins. Or until the dough is smooth.
3) Increase speed until the dough breaks from the sides of the bowl, taking the bowl off the hook occasionally to mix it evenly.
4) Place the dough in a clean bowl and cover with plastic wrap and leave at room temperature.
5) Wait till double in volume. Around 90 mins to 2 hours.
6) Punch down the dough and cut desired volume sizes.
7) Roll or stretch dough out onto a pan oiled with olive oil.
8) Let the dough rest for 15 mins. after stretching to desired shapes.
9) Fold dough around the edges.
SAUCE:
1) Put oil in saucepan and heat.
2) Saute onions and garlic until soft or translucent.

Grahams Buko Pie


Ingredients:
Crust:
1 cup  unsalted butter
1 & 1/2 cups crushed Grahams
1/2 cups  oats
3 tbsp sugar
Filling:
1/2 cup coconut water
1/2 cup sugar
1/2 cup evaporated milk
2    cups young coconut meat, cut into strips
1/3 cup cornstarch
How to make Grahams Buko Pie
  • Prepare crust: Melt butter in pan; add oats, crushed Grahams and sugar. Cook 3 minutes.
  • Press half of mixture evenly in serving dish. Refrigerate 30 minutes.
  • Prepare filling: Mix coconut water and evaporated milk in bowl.
  • Mix cornstarch and sugar in saucepan.
  • Add coconut meat and cook over medium heat 20 minutes or until mixture thickens.
  • Spread coconut mixture over refrigerated crust. Top with remaining Grahams mixture.
  • Chill before serving.
Maja Blanka

4 cups thin coconut milk
2 cups buko juice
1 cup powdered milk
1/2 cup water
1 & 1/4 cups sugar
1/2 teaspoon salt
1 cup cornstarch
1 cup water
1 can cream style corn
shredded buko meat from 2 coconuts
1 cup thick coconut milk ( for latik )
How to cook maja:
  • In a large casserole put all Maja Blanca ingredients. Simmer over low fire for about 15 minutes. Pour into serving dishes and cool.
  • Heat the thick coconut milk over medium heat. When it starts to boil lower the heat and cook for about 25 minutes stirring constantly. Strain excess oil. Sprinkle over cooled Maja Blanca. Makes 12 portions
Note: To make the maja more flavorful, the addition of milk powder was implemented. Believe me this is tastier than the ordinary maja blanca I’ve tried.

PALITAW

Ingredients
* 3 cups sweet rice flour
* 1.5 cups of water
* 1 small coconut grated
* 1 cup sugar
* 1/4 cup toasted sesame seeds, crushed

METHOD
1. Bring 2 quarts water to a boil.
2. Meanwhile combine rice flour and 1.5 cups of water and blend thoroughly. With floured hands, shape dough into egg sized ovals and flatten with thumb.
3. Drop palitaw balls in boiling water. Scoop out with clotted spoon as soon as they float. Drain. Roll in grated coconut.
4. Serve with sugar mixed with toasted sesame seeds.
Preparation and cooking time: 45 minutes
Makes about 4 dozens of palitaw 

KUTSINTA

Materials and Ingredients Needed
·         Steamer
  • Mixing bowl
  • Muffin pans or small, shallow bowls
  • Measuring cups & spoons
  • Wooden spoon
·         2 cups cassava flour
  • 2 cups all-purpose flour
  • 4 tsp lihia or lye water, P22.50 for 250g, available in supermarkets
  • 2 cups pandan juice
  • 8 tsp butter
  • 2 cups brown sugar
  • Freshly grated coconut as topping

Procedure
  1. Mix the butter and sugar.
  2. Sift the all-purpose flour and cassava flour.
  3. Combine these with the mixed butter and sugar.
  4. Pour the pandan juice and lihia and mix again until the texture is smooth.
  5. Pour into a muffin pan or shallow bowls, making sure to leave room at the top.
  6. Steam for 20 minutes.
  7. You may sell this with grated coconut on the side.


PUTO CHEESE
Ingredients
* 2 cups all purpose flour
* 1.5 cups fresh milk
* 1 tbsp plus 1.5 tsps baking powder
* 1/2 cup sugar
* 1/4 tsp. iodized salt
* cheese as desired
* 1/16 powder color if desired

METHOD

1. Combine sugar, all-purpose flour, BAKING POWDER and IODIZED SALT. Dissolve POWDER COLOR in milk and add to dry ingredients. Beat until well incorporated.

2. Prepare muffin pans or puto molds greased with FERNA BUTTINA BUTTER SUBSTITUTE. Pour the mixture into the puto molds, top with strips of cheese and steam for 30-40 minutes.

Another number is comin...

42 days fast approaching and another number is going to add on me and if I am going to reverse the 42, I am 24 soon. Woahhh! I'm happy though that I am going to reach this 24 years of existence in this crazy mad awesome wOrld. Wait! this isnt goodbye words from me, okay! It just happen that I was sitting in front  of the computer and got nothing to do, so I decided to write something on my blog since its been a while that I have not visited my online diary. 

So, I am not worrying about age or something in fact I was happy that every time you got to celebrate your day you are the happiest and special person who is celebrating on your precious born day even if you haven't get any gifts or things that you wanted but a simple greetings to a friends & loved ones makes you worth special person in the whole world.

Less worrying is what I've learned this couple of days with what I have read on a book and so I am trying my best to apply it eventually since I am not that so optimistic person and for that I tried to ignore negative side and more on the positive side because on what I have learned the more you worry the more you get stuck into stress to sickness so be"STRESS FREE" and keep smiling, of course you don't want to be looking old when your age is still young, don't you?

Ohh! hahahaha got quoted something on my mind "ONE SMILE A DAY KEEPS THE DOCTOR AWAY" I hope that work but who knows unless you try and besides smiling makes no stress, so there's nothing wrong with that.

Another number's forthcoming yet I am not expecting gifts from friends & loved ones and a big celebration on the occasion, I was just being thankful for days spent smiling and for being with your loved ones because not everyone got lucky to be spending good time with the family. Ohh! another thing, turning 24 its not really easy because some people say I have not yet accomplish anything turning this age but I just want to spell this out with you guys that those days I've spent was more than an accomplishment compared to anything material things in this world because on the material side, there could never be enough. I might sound nagging to you guys but apology if I do but this is just an experience and thanks for reading, remember the more you worry a lot the more you'll be stuck on it. Keep Smiling :))

one lAst summer hirit!


June starts and its another school year again, so before the school madness and the crazy busy days with work we succeeded the last summer with full force. SummEr fun's remarkable, am surely gOnna miss it! So much for the pIzzA's, cOrnettO's, icE crEams, skateboarding, cruisin, music jammin and thE lAagz (the joyride and hang outs), oh bOy! I'm gOnna mizz it...

Skateboarding. Just recently know how to ride on it, but I do love skateboard since but just don't know how to play with it and I even don't own one.




The weather was fine while on our way walking to the sea, but suddenly the rain fall with a strong wind that destroy 1 of our umbrella and then after the fast rain and wind the beautiful weather comes out and we keep on the track walking.





I had so much fun with this guys and super love the nature... sOothing!
Simple things but I really do appreciate the beauty that God created and thanks Him for giving me such opportunity to see this scenic beauty and giving me chance to breath in fresh air and to live to the fullest for a while.
I am glad that I had so much thing thAt had dOne this summer and now, bAck to busy dAys wOrkin...

CARAYCARAY RIVER CRUISE


Finally cruisin the Caraycaray River Cruise which took us for a few months just to make it happen, we've been planning it with my cousin and friends to explore the Caraycaray river for a few months now but luckily find the time at May 22, 2011 which is a high tide, so its good to see the sights of the river. This is the newly discovered tourist attraction this year by LGU where its located in my hometown, so its just a walking distance til you reach the river. Since this was discovered for an ideal cruise, our curiosity knocks and we want to explore it by ourselves too and now that we've finally cruise it for ourselves , it was a priceless experience!

I remember my childhood days where we hang out with my grandfather crossing along the river to his rice fields and swimming carefree with friends in this river until our skin gets dark and don't bother because we did really enjoy the river. It’s so much fun to remember childhood days, the playful childhood and don’t bothered about what’s going to happen next, the happy-go-lucky thing.

Caraycaray Bridge is just 2 kilometers away reaching the Municipality of Naval and this serves as the starting spot of the river cruise and Barangay Caraycaray fits to be very ideal for cruise because of the length, size and location. The natural attraction place was ready to be develop and once its fully develop then it’s ready to be promoted as another tourist attraction.

Well, of course I would be proud that my birthplace would be another destination for tourist or sightseer and for whose looking for a new adventure with friends to hang out; I recommend this cruise for stress free and to explore the soothing beauty of nature.

Tips on getting FRIENDSTER PHOTOS

There are some questions in the net on how to migrate old pictures from Friendster, MySpace, Multiply and other social sites to Facebook or vice versa. This wouldn’t really be a problem if you have a backup copy of your photos that you uploaded to these social media sites. All you have to do is re-upload them to your new account, right? But, what would you do if you accidentally lost your backup and the uploaded pictures are the only ones left? Or, simply you want to have new copies of your pictures online so you can save them to your hard drive.

I tried some software that will scan your online pictures and automatically save them to your hard drive. But the thing is it will also download other unwanted pictures or photos.

Now, here are the easy steps on how to transfer pictures from Friendster to Facebook easily or you can easily download pictures in one album to you My Documents. You’ll need Mozilla Firefox browser for this trick to work.

1. Login to your Friendster account and go to the photo album section of your account.

2. Browse each picture in one of your albums. This will make the pictures download faster and avoid missing photos.

3. On you Mozilla Firefox menu, click Tools >> Page Info or use the shortcut button by pressing Alt+t then Press I. This will open the Page Info window.

4. Click the Media Icon on top of the Page info window.

5. Look for Image Type files that starts with http://photos.friendster.com

6. Select all the images that you want to save. You can see the preview of each picture at the bottom of Page Info window.

7. Click Save As.

8. You will be prompted for a Directory to save the selected pictures. You can create a new folder by pressing the New Folder button.

9. Click Save.

10. You will see that your selected photos are being downloaded to your selected folder.

Scenic Friday

Holy Friday, April 22, 2011 when my friends, sister and my cousins are ready to go on our journey to the white cross. I woke up at 5:30 in the morning because I was thrilled to go to the top of the mountain for the first time for the reason that I am very curious what would it be look like or what experience would I encounter in this day and when I was in elementary days this have been a curiosity to me because every holy week, people would go there for sacrifices & different reasons.

At 7:00 am when all of us are set and ready to go, we start walking... since most of us are first timer, we don't know really how long would it take. It was a beautiful sunny day with so much talking and laughing as we try reaching the mountain, it was kind of not so easy to be climbing the mountain if you get lost and use the wrong way, so it was sort of adventurous without any equipments for climbing but our bare hands.
We didn't feel tired as we go along and even if we are perspiring because of too much heat and struggling climbing some damp land and holding/helping each other to reach the peak but everytime we look what's down the hill, we are so much delighted of the scenic nature and its so worth it to hit the highest point of the mountain and feeling overjoyed as you see the beauty of nature. It took us 1 hour and 5 minutes to be on top of the mountain and there are lots of people who were there and had overnight on that peak, so we find a place where we can sit and just look downhill. We are very noisy when we got there, because we had lost track, so it took us long to get there but we were happy of the experience. So, after finding a place where we can have a look at the beautiful nature piece of art, we just stare at it silently and was so proud to watch God's art.

It was one of great Holy week experience watching the beautiful view of nature and reaching the big white cross at the peak of the mountain. I know people and my companions have had fun and so am I.
